Vegetarian Avocado Chicken Sandwich

I used to be a fan of chicken salad sandwiches, so I wanted to make vegetarian salad sandwich.
This came out tremendously better than I expected and it is amazingly healthy for you!

This keeps well in the fridge for a couple days, so feel free to mix it up and add tuna or chicken if you eat them. Also, try this the next day on a whole wheat tortilla with some chopped almonds and spinach!





Ingredients:
Whole wheat bread
1 avocado
1/4 cup plain greek yogurt
2 carrots, grated
2 hard boiled eggs
1/4 cup cooked quinoa
1 T sriracha or other hot sauce
1/4 cup red onion, small diced
1 clove of garlic, minced

In a bowl, mash avocado, carrots, egg, cooked quinoa, onion, and garlic until slightly chunk, like guacamole.
Add yogurt and hot sauce until well incorporated. Spread between two pieces of bread and enjoy!
