Tomato, Spinach, and Feta Pizza






Late Sunday night I had a craving for pizza. I didn't want a heavy, store bought or delivery pizza, so I decided to create something a little lighter, yet satisfying. This was it! I am so thrilled about this recipe for so many reasons. It is so simple, so easy, and so cheap to make. It can be done in less than 15 minutes! Give it a try and let me know how you enjoyed it.



Ingredients:
1 mini store bought pizza crust
Olive oil
1 clove of garlic, minced
1 tomato, sliced thinly
Handfull of spinach
1/4 cup mozzarella cheese
3 T of feta cheese, crumbled

Preheat your oven to 450, if you are using a pizza stone, preheat that inside of your oven.
Brush the crust with olive oil and bake for a couple minutes.
Remove, spread with minced garlic, and sliced tomatoes. Bake for about 7 minutes or until tomatoes are almost tender.
Remove, top with spinach, mozzarella cheese, and feta cheese. Bake until spinach has wilted and the cheese has melted.
Drizzle with olive oil, sprinkle with salt and freshly ground black pepper!
