Healthy Tofu Fried Rice


Fried rice is one of those items that you splurge your calories on. Because every once in awhile, nothing hits the spot like this warm, satisfying rice dish. But at the same time, it makes you wonder, "How can I make this lighter? How can I make this healthy enough to eat more than once in a blue moon?" Well my friends, I found the answer! And I am willing to bet you have most of the ingredients in your kitchen right now, which makes it perfect for an end of the week meal that won't require you to run to the store. 

This dish is also, perfect for meal prep days. It re-heats well and will keep for a few days in the refrigerator. This is also a dish that can be made very versatile. I made it with tofu, but if you prefer chicken, use a chicken breast and feel free to swap out the peas for any other veggies you have on hand. 

Ingredients:
2 TBSP olive oil
1/4 of a white onion, diced
1 garlic clove, minced
1/2 package of firm tofu, diced
1 handful of frozen peas
2 eggs, whisked
1 cup cooked brown or basmati rice
1 TBSP sesame oil
Soy sauce to taste
Sriracha to taste


Directions:
1. In a medium saute pan, heat oil over medium heat. Saute onions until tender, add frozen peas, cook for about two minutes. 
2. Add garlic and saute until fragrant, about 1 minute. 
3. Add tofu and heat through.
4. Whisk eggs, and pour into saute pan. Scramble with a spatula until fully cooked.
5. Add cooked brown rice and mix until hot.
6. Add soy sauce, Sriracha, and sesame oil to finish.
