Asian Marinated Shrimp Skewers

Okay, so you know when you're in the shower and an idea just pops into your head? Well this is how this recipe came to me. I was thinking about the practical that I have to take for class tomorrow and I knew I would have shrimp, peppers, onions, eggplant, and so on. Somehow I decided I was going to go with an Asian flare, and shrimp skewers came to me.

So yesterday I made it happen and they are INCREDIBLE. This has to be one of the best things I have made in a long time and I am so excited to share it with all of you! It's perfect for a summer bbq to share with friends! I grilled them off today and I had way more than I could ever eat, so I gave them away at the pool. I went back to my apartment and smashed! I am so happy with how these came out and I hope yours are equally as delicious! Also, if you aren't a huge fan of shrimp, feel free to swap them out for tofu, chicken, beef, or even pork. This marinate will be delicious on all! Enjoy!!




Ingredients:
1/2 lb shrimp, peeled and deveined
1/2 red onion, chopped
1/2 zucchini, chopped
8 white mushrooms, halved or quartered

Marinade:
1/4 cup soy sauce
1 TBSP Hoisin
1 tsp fish sauce
2 tsp mirin
2 TBSP sesame oil
3 TBSP olive oil
1 lime, zested and juiced
Red pepperflakes to taste
1 TBSP fresh grated ginger

1 TBSP cornstarch
1 TBSP water

Salt to taste
Green onions for garnish

Directions:
1.Chop all of your veggies about the same size, you want them to be about as big as your shrimp so they all hold up on the grill and cook evenly.
2. Peel and devein the shrimp if you didn't buy them this way.
3. Meanwhile, mix the marinate together and set aside.
4. Marinate shrimp and veggies for at least 2 hours and up to overnight.
5. About 10 minutes before grilling, soak your skewers in cold water so they don't burn on the grill.
6. Assemble your skewers, alternating veggies and shrimp.
7. Take the remaining marinade and place in a sauce pot on the stove. 
8. Bring to a boil and let boil for 1 to 2 minutes.
9. Mix water and cornstarch together and slowly whisk into boiling marinade.
10. Turn down the heat and keep stirring until you reach desired thickness.
11. Salt and pepper just before grilling, cook about 4 minutes per side, depending on how large your shrimp are. 
12. Remove from grill, baste with thickened marinade and top with green onions.
