Hummus is one of my favorite snacks! You can dip virtually anything in it, it's an amazing sandwich spread, it's low in calories and fat, and you can make any flavor you want! Today I really wanted a snack so I went rummaging through my cupboards. The ingredients I used to make this hummus, I sort of just stumbled upon in my pantry. This version is pretty spicy, because that's how I enjoy my hummus. If you would like a hummus that is a little more mild, reduce or eliminate Sriracha and Chipotle Powder.
Red Pepper Hummus:
1 can Garbanzo beans, no salt added, rinsed and drained
1/4-1/2 cup extra virgin olive oil
1/2 can roasted red peppers
1/3 cup tahini paste
1/2 lemon, juiced1/3 cup tahini paste
3 T feta cheese *(optional)
3 T Sriracha
1 tsp chipotle powder
2 small cloves of garlic (or 1 medium sized clove)
1 tsp salt
1/2 tsp black pepper
Directions:
In a food processor, blend Garbanzo beans with tahini paste and 1/4 cup olive oil until smooth. You made need more olive oil depending on how wet the beans are. If you are having trouble getting a smooth texture, add more oil and keep pulsing it. Add peppers, lemon juice, cheese, garlic, and spices. Blend until smooth. Taste and adjust seasonings if necessary.
Enjoy with pita chips, carrots, peppers, broccoli, or even on a sandwich. Be creative with your hummus and let me know what this inspires you to make.
