Kale. I. Love. Kale.
Kale is an incredible vegetable. Kale is low in calories, has zero fat, high in fiber, zinc, vitamin A, C, K, calcium, is high in antioxidants and is an anti inflammatory. Need we say more about kale? Not at all.
Well kale chips have become widely popular in health foods around the country. They are a great snack in place of potato chips, for more reasons than one. But the thing is, commercially made kale chips are awful and outrageously expensive. A typical bunch of kale will cost you about 99 cents. A bag of potato chips is on average $3-$4. Kale chips are $6.00!!!! How ridiculous is that?! If you buy your own kale, you know how much sodium is in it, you're saving money, and enjoying a healthy snack!
Ingredients:
1/2 bunch kale
Olive oil
Salt
Pepper
1/4 cup parmesan cheese
Directions:
Preheat your oven to 400 degrees.
Lay a footed wire rack on a cookie sheet.
Remove the rib from the leaves of kale and tear into desired size.
Lay the ripped kale leaves on the wire rack, sprinkle with oil, salt and pepper.
Bake for about 5 minutes, or until browned and crispy.
Remove and immediately top with Parmesan and a little more salt.
