Veggie Quinoa Wrap
Are you looking for a quick lunch recipe that you can take on the go? This recipe uses left over veggies and quinoa to make a super healthy, delicious, wrap! I used certain veggies in this, but use your judgement. If you don't like zucchini, substitute a vegetable you do like. Cooking is about adapting to your taste buds It's important to always use a recipe as a guideline, it's not an instruction manual. Feel free to change, substitute, or add any ingredients that you feel would better this! As always, try it out and let me know what you think!
Ingredients:
1 whole-wheat tortilla shell (two if they are the smaller size)
1/2 cup left over quinoa
1/4 cup red onion, diced
1/2 zucchini, diced
3 mushrooms, chopped
1 cup of raw kale or spinach
1/2 red pepper, diced
2 T hummus
1 T olive oil
Salt and pepper to taste
*if you are looking for added protein and you consume meat, you can always grill, bake, or sear a chicken breast, dice it and throw it in!
Directions:
Get all of your vegetables chopped and ready to go. Heat a skillet over medium heat then add the olive oil. Once the oil is hot, add vegetables into the skillet, adding the peppers, zucchini, and onions first. Saute for a few minutes until they are beginning to break down. Then add the mushrooms and kale, saute until soft. Sample one of the veggies and adjust salt and pepper, if necessary.
For the quinoa, if you any left over that will be just perfect! (If not, you can make it in about 15 minutes. The easiest way is taking a 2:1 ratio of water to quinoa. Bring the water to a boil then add the quinoa. Put the lid on and turn heat down to a simmer. Simmer for 15 minutes, uncover and let sit for two minutes. Add additional water, if necessary, then fluff with a fork.)
You can either assemble your wraps now by spreading the tortilla with hummus and adding the quinoa and veggies. If you plan on taking this lunch on the go, I would recommend keeping the tortilla and hummus separate from the quinoa and veggies. When ready to assemble, heat veggies/quinoa in a microwave, then roll it up and enjoy!!
