Banana-chocolate chip pancakes




This recipe I orininally got from Pinterest. The recipe came from another blogger called the Minimalist Baker. Check out her recipes, they're all pretty rad!! I cut this recipe in half, and changed it slightly, and it was perfect!

Ingredients:
1 ripe banana
1/2 tsp baking powder
1 egg white
1 tsp chia seeds
1/2 tsp vanilla extract
3 T PB2 (regular peanut butter, or almond butter can be substituted)
1 T canola or coconut oil
1 1/2 T almond milk
1/4 cup rolled oats
1/8 cup whole wheat flour
2 T chocolate chips

1 T almonds, chopped
Pam baking spray

Directions:
Mash 1/2 of the banana with a fork and add the baking powder. Then add egg white, chia seeds, vanilla,  1 T of the PB2, oil, and milk. Once that is mixed, add oats and flour, then fold in chocolate chips.
Heat a skillet over medium-high heat, and spray skillet with Pam. Take 1/2 of the batter and pour it into the hot skillet. Cook for about 3-4 minutes on one side, then flip. Continue cooking until the pancake is cooked thoroughly.
Take the other 1/2 of the banana and cut into disks. Spread the rest of the PB2 over the pancakes and top with chopped banana pieces, almonds, and extra chocolate chips if you so desire!
